BOTULISM: CAUSES AND SYMPTOMS
Food poisoning is due to several different infectious organisms. The most dangerous is the one called Clostridium botulinum. Foods improperly canned and contaminated by this organism develop serious poisons which can cause death if taken in sufficient amounts. The nature of the food, whether acid or alkaline, the amount of sugar present or the extent of the heating during preserving will definitely affect the amount of botulinum present and the amount of the toxin that may be developed. Commercially-canned foods are seldom or practically never infected with botulinum. Home canning is not as safe as commercial canning. Home-preserved foods should be boiled for six minutes before they are tasted or served.
The symptoms of botulism are weakness and paralysis, sometimes beginning with double vision. Eventually the people who have been poisoned with the toxin develop difficulty in talking and in swallowing. Doctors will do their best to keep the patient alive until the anti-botulism serum can be secured and administered.
